This palace in the centre of the town takes its name from Giovanni di Audino Salmatoris, the local nobleman who had it built as his residence in 1620. In 1631 he hosted Victor Amadeus I and his wife Christine Marie of France who were seeking refuge from the plague epidemic that was spreading through Piedmont. In 1706, the Holy Shroud was placed in the "saletta del silenzio", the little room of silence, for safekeeping from the French. Palazzo Salmatoris is also known as the "Palazzo della Pace", the palace of peace, because it was here that the Armistice of Cherasco between Napoleon I and the Savoys was signed in 1796. In the middle of the 19th century the palace was acquired by the Paoletti del Melle family from Busca, who hired the best artisans and artists of the time to carry out significant restoration works.
The palace is currently the property of the municipality and is an important cultural centre, hosting exhibitions and artistic festivals.
It is impossible to separate a visit to the palace from the important exhibitions it regularly hosts. The exhibition space takes up the whole of the main floor and continues to the completely restored upper floors. The wide staircase that leads from the ground to the main floor is made of stone and dates from the 19th century. The "saletta del silenzio", now known as the "sala della Sindone", the hall of the Shroud, is also open to visitors.

Events: "Grandi Mercati di Cherasco": every month from April to December the town holds a different market. The antique and collectors' markets are in April, September and December, while in other months there are markets for vintage fashion; art ceramics and glass; vintage cars, bicycles and motorcycles; antique and collector's watches and clocks; antique books and paper; vintage music and records; stamps and coins; antique toys and second-hand models; paintings, sculptures and arts and crafts.
